Title: Irish Soda Bread

Yield: 1 Loaf
1 1/2 c Plain nondairy milk;
- unsweetened
1 1/2 tb White vinegar
4 c All-purpose flour
1 1/2 ts Salt
1 ts Baking soda
1/2 ts Baking powder
Preheat the oven to 375?F. Lightly oil a baking sheet and set aside.
Combine the milk & vinegar in a measuring cup and set aside.
In a large bowl, combine the flour, salt, baking soda, and baking
powder, and mix until blended. Add enough of the milk mixture to make
a soft dough that is not too sticky. Knead just until the dough is
smooth, about 3 minutes. Shape the dough into a round loaf and use a
sharp knife to cut an X in the top. Place on the prepared baking
sheet.
Bake on the center oven rack until golden brown, 40 to 45 minutes. The
bread is done when it sounds hollow when tapped on the bottom. Remove
from the sheet and let cool on a wire rack before slicing. This bread
is best eaten the same day it is made.
