Title: Chicken Satay

1 lb Boneless chicken breast; cut
-into 1/2" cubes
MMMMM--------------------------MARINADE-------------------------------
1 tb Sweet soy sauce
3 cl Garlic; crushed
1 Fresh ginger piece (1");
-grated
1 tb EVOO
MMMMM------------------------PEANUT SAUCE-----------------------------
3 tb Vegetable oil
1 tb Garlic; chopped
1 sm Onion; chopped
3 Red chillies; up to 4,
-crushed and chopped, (or
-red curry paste)
3 Kaffir lime leaves; torn
1 Lemon grass stalk; bruised
-and chopped
1 ts Medium curry paste;
-(optional)
1 c Coconut milk
1 Cinnamon stick (1/2")
3 oz Crunchy peanut butter
3 tb Tamarind juice
2 tb Fish sauce
2 tb Palm sugar (or brown sugar)
1/2 Lemon; juice of
Marinate chicken cubes for about 2 hours. Place chicken cubes on
skewers and braai (grill/BBQ) over hot coals until done.
Serve with Peanut sauce
Peanut sauce:
Heat oil in a wok or large frying pan and add the garlic and onion -
cook until it softens.
Then add the chillies or chili paste, kaffir lime leaves, lemon
grass, and the medium curry paste (if you are using that too). Cook
this for about 2 minutes.
Stir in the coconut milk, cinnamon stick, peanut butter, tamarind
juice, fish sauce, palm sugar, and lemon juice.
Then reduce heat and simmer, (about 15-20 minutes) stirring until it
thickens and to make sure it doesn't stick to the bottom of the pan.
