Title: Sunrise Pancake Casserole

Yield: 8 servings
1 lb Spicy pork sausage
8 c Pancakes; in 1" pieces
8 lg Eggs
2 c Milk
1/2 c Syrup
1/2 ts Salt
1/2 ts Pepper
1 c Shredded cheddar cheese
Chopped green onions
In a large skillet, cook pork over medium heat until no
longer pink, 6-8 minutes, breaking into crumbles; drain.
In a greased 13" X 9" baking dish, layer half the
pancake pieces and sausage; repeat layers. In a large
bowl, whisk eggs, milk, yrup, salt and pepper. Pour over
pancakes. Sprinkle with cheese. Cover and refrigerate 8
hours or overnight.
Remove from refrigerator 30 minutes before baking Bake,
uncovered @ 350oF/175oC, until a knife inserted in the
center comes out clean, 35-40 minutes. Let stand 5
minutes serving. If desired, sprinkle with green onions
and serve with additional syrup.
