Title: Gluten-Free Pizza Crust

Yield: 6 servings
1/4 oz Env active dry yeast
2 ts Sugar
1 c Warm water (115ºF/46ºC)
3 c Gluten-free baking flour
- w/xanthan gum; more for
- rolling
1 ts Baking powder
1 ts Salt
1/2 c Olive oil
1 lg Egg; room temp
1 ts Cider vinegar
Set oven @ 425ºF/218ºC.
In a small bowl, dissolve yeast and sugar in warm water.
In a large bowl, combine flour, baking powder and salt.
Mix in oil, egg, vinegar and yeast mixture. Beat on
medium speed until smooth, dough will be sticky.
Gently shape into a ball, place in a greased bowl,
turning once to grease the top. Cover with a clean
kitchen towel; let rise until doubled, about an hour.
Grease a 14" pizza pan. Punch down dough; transfer to
prepared pan and press to edges. Bake until lightly
browned, 8-10 minutes.
Top as desired; bake until toppings are heated through,
10-12 minutes longer.
