Title: Mediterranean Cobb Salad

6 oz Box falafel mix
1/2 c Sour cream or plain yogurt
1/4 c Chopped seeded peeled
- cucumber
1/4 c Milk
1 ts Minced fresh parsley
1/4 ts Salt
4 c Torn romaine
4 c Fresh baby spinach
3 lg Hard-boiled eggs; chopped
2 md Tomatoes; seeded, fine
- chopped
1 md Ripe avocado; peeled, fine
- chopped
3/4 c Crumbled feta cheese
8 sl Bacon; cooked, crumbled
1/2 c Pitted Greek olives; fine
- chopped
Prepare and cook falafel according to package
directions. When cool enough to handle, crumble or
coarsely chop falafel.
In a small bowl, mix sour cream, cucumber, milk, parsley
and salt. In a large bowl, combine romaine and spinach;
transfer to a platter. Arrange crumbled falafel and
remaining ingredients over greens. Drizzle with
dressing.
