Title: Key Lime Pie Cookies

1/2 c Butter; softened
1/2 c Shortening
1 1/2 c Sugar
1 lg Egg; room temp
1 lg Egg yolk; room temp
1/2 ts Grated Key lime zest
2 tb Key lime juice
3 c A-P flour
2 ts Cream of tartar
3/4 ts Baking soda
1/2 ts Salt
1/2 c Graham cracker crumbs
Set oven @ 350oF/175oC.
In a large bowl cream butter, shortening and sugar until
light and fluffy, 5-7 minutes. Beat in egg, egg yolk,
lime zest and juice. In another bowl, whisk flour, cream
of tartar, baking soda and salt; gradually beat into
creamed mixture.
Shape tablespoonfuls of dough into balls. Roll in graham
cracker crumbs and place 2" apart on greased baking
sheets. Bake until edges just begin to crack and tops
are set, 8-10 minutes. Let cool 5 minutes before
removing from pans to wire racks to cool completely.
